  1. Get 1 1/4 cup cookie crumbs, Graham crackers work best
  2. Prepare 1 tsp cinnamon powder
  3. Prepare 1/4 cup sugar
  4. Get 1/4 melted butter
  5. Provide 32 ounces cream cheese, room temperature
  6. Get 1 cup sugar
  7. Take 2 tsp lemon juice
  8. Take 1 tsp vanilla extract/essence
  9. Provide 4 eggs
  10. Use strawberries, optional, 9 used in presentation
  11. Provide Spring form cheesecake 9 inch non stick pan
  12. Use Aluminium foil & Water

  1. Preheat oven to 300 Fahrenheit or 148 Celsius. Create the crust: first, finely crush the graham crackers into powder form. Then take out into a bowl and add the sugar and cinnamon,mix until well combined. Now add in the butter,mix until the crumbs form a base that can be molded. Now pour the crumbs into a spring form 9 inch non stick pan and spread evenly. The base should be firm with the no gaps. Set aside.
  2. Blend cream cheese until fluffy
  3. Add sugar, mix well
  4. Add vanilla, lemon, one egg - mix well
  5. Add the other 3 eggs, one egg at a time, mix well
  6. Pour batter onto prepared pan with cookie crust
  7. Prepare water bath- place pan onto a deep oven dish. line the bottom of the pan with aluminum foil so no water can reach the inside just to be safe. In the deep dish add water so it is at least covering the bottom half inch of the cake. This step is so the cheesecake doesn't crack on top.
  8. Place into oven and bake for 1 hour 20 minutes
  9. Once the time is up turn off the oven and the cake in the oven to cool down for 1 hour.
  10. Take out the cake and place on to a rack, don't remove it from the pan but remove the foil. and let it sit at room temperature until completely cooled, this depends on the temperature where you leave/ of your kitchen.
  11. After it is completely cooled wrap with cling wrap plastic and set in the fridge for 12 hours.
  12. After 12 hours remove the plastic and open the pan from the side, leave the bottom part. Place onto a dish and decorate with strawberries cut in half and strawberry sauce (optional)
  13. Tip: For a clean cut of each slice dip your knife into hot water and wipe with a towel each time you make a cut. This will give you perfect slices. If the cheesecake won't be eaten after 12 hours leave it in for longer, don't take it out if you aren't eating it right away.
