  2. Provide 1 lb small red beans (dry) or 3-4 cans
  3. Get 2 lb ground turkey or beef
  4. Prepare 2 jalapeño sliced (if you like it hot)
  5. Get 1 medium onion, chopped
  6. Prepare 1 can rotel (diced tomatoes & peppers)
  7. Prepare 2 cup white or brown rice
  8. Take spices

  1. Rinse and soak beans over night
  2. Put beans in crock pot add enough water to cover beans about 3-4 inches. Cook on low 6-8 hours.
  3. Brown your meat' drain fat and add half the onion 1 jalapeño and the can of rotel. Add spices and simmer until onion and jalapeño is tender.
  4. Slowly add beans to meat add as much bean water as you like. I added it all!
  5. Stir together beans and meat add more spices & season to your liking. Simmer 10 to 20 minutes.
  6. Cook your white or brown rice to serve on top
