- Provide 2 lb Fresh, ripe tomatoes
- Prepare 5 tbsp Butter
- Get 1 medium Onion, peeled and cut in half
- Provide 1 bunch Garlic, cut in half horizontally and peeled

Steps to make Tomato Sauce:
- Peel tomatoes by: cutting around core and remove. Cut X in skin at other end. Put in boiling water for a minute and then dunk into iced water. The skin should slip off.
- Roughly chop the tomatoes and put in a saucepan with butter, onion, half the garlic bunch and a pinch of salt.
- Cook uncovered at a slow simmer for around 45 minutes. Stir occasionally and mash tomatoes with the back of a wooden spoon.

- Return to saucepan and simmer until sauce has thickened. This can take up to a hour depending on how juicy your tomatoes are.
