The ingredients needed to prepare Kumara Puffs:
  1. Use 3 small kumara, peeled & sliced into 1cm thick rounds
  2. Prepare 1 1/2 tbsp olive oil (to coat the kumera)
  3. Take 375 grams puff pastry rolled out to 24cm square and chilled
  4. Use 3 tbsp sour cream or creme fraiche
  5. Prepare 125 grams marinated feta, drained
  6. Take 1 egg, lightly beaten
  7. Take 2 tbsp olive oil (for the drizzle)
  8. Get 2 clove garlic, finely diced
  9. Use 1 red chilli, deseeded, finely diced
  10. Use 2 tbsp coriander or parsley
Steps to make Kumara Puffs:
  1. Preheat oven to 200°C.
  2. Lay kumara in a single layer on a baking tray. brush with oil and season with salt and pepper. bake for 15 mins until soft.
  3. Cut rolled pastry into four 12cm squares.
  4. Prick the pastry in a couple of places but not too close to the edge. leave a 2cm border unpricked.
  5. Spread pastry with sour cream still leaving the 2cm border bare. season with salt and pepper.
  6. Top with roasted kumara, slightly over lapping each other. Crumble the feta over top.
  7. Brush beaten egg around the clear border.
  8. Bake for 25 mins until pastry is golden and puffed around the border.
  9. While the puffs are cooking combine olive oil, chilli, garlic and coriander. season with salt and pepper.
  10. As soon a the pastries come out of the oven brush with the oil mix.
  11. Serve while still warm.
