- Provide 1/3 cup apple cider vinegar
- Provide 1/3 cup sugar

- Provide 2 tablespoons Chinese black vinegar
- You need 1/2 teaspoon ground ginger powder

- Take As needed water to thin the sauce
Instructions to make Duck/Plum Sauce:
- Halve and Pitt the plums. Sprinkle with a little salt. Add to a pot.
- Add the rest of the sauce ingredients part I, to the pot. Simmer 20 minutes.
- Check the dried apricots for pitts and pit fragments. Slice them in half.
- Add to a pot with the ingredients of sauce part II. Simmer 20 minutes.
- Add to a blender both parts of the sauce. Blend till smooth. Thin with water if to thick. Chill in the refrigerator overnight.
