The ingredients needed to make Simple Carrot Cake:
  1. Use 2 cups flour
  2. You need 2 tbsp baking powder
  3. Take 2 tbsp baking soda
  4. Take 1 cup sugar
  5. You need 3 grated carrots (large)

  8. Provide 1 cup cooking oil
  9. Take 1 cup butter milk/ mala

  1. Mix all dry ingredients together (flour, baking powder and soda)
  2. In a separate bowl, mix the wet ingredients (sugar, oil, mala, yolks)
  3. Whisk the egg whites till they have a stiff peak.
  4. Add the wet mixture to the dry mixture and stir till it all comes together- don't over mix. It is okay to have a few lumps.
  5. Pre- heat your oven at 200° c for 15 min.
  6. As the oven is preheating, add your egg whites to the cake batter and softly stir in one direction
  7. Line your baking pan/ put oil and softly dust with flour. Pour the cake mixture into the pan.
  8. Put pan in oven and reduce heat to 180° C for 20 minutes. Check if it is well done by inserting a tooth pick- it should come out clean with no cake residue.
