- Provide 1 red bell
- Use 1 yellow bell
- Take 1 green bell
- Provide 1/4 cup spring onions bulbs
- Provide 1/4 cup spring onion greens

Instructions to make Mexican Burritos:
- Preparing salsa : Take all the ingredients mentioned under salsa. Roughly chop the onions, tomatoes and chillies. Pulse them in the mixer. The salsa should be slightly chunky and not a runny paste. Remove in a bowl and set aside.
- For Mexican rice : Heat oil in a vessel, add the chopped garlic and Chilli flakes. Saute for a few seconds. Now add some of the spring onions. Add rice and roast for a few seconds. Add tomato puree and mix well. Adjust the consistency by adding vegetable stock and let the rice cook till almost done. Add the capsicum, yellow bell and spring onion and coriander leaves. Mix well. Simmer with lid till done.
- For sour cream : mix hung curd, cream, garlic powder, pepper powder, lemon juice and salt and chill in refrigerator. Add salt and lemon juice as per your curd. If it is too sour you can reduce their quantity.
- For baked beans : Heat oil, add chopped garlic, Chilli flakes and saute, add red chilli powder, spring onions and the baked beans. Mix well. Simmer for few minutes.
- For stir fried veggies : Heat oil. Add chopped garlic, red chilli powder, cumin powder, salt and pepper powder. Saute for a few seconds. Add the onions and other veggies,Stir fry for a few minutes and set aside. Now we have everything ready to assemble the burritos.
- Assembling of the Burritos.. Take a tortilla in a plate. First add a big spoonful of rice, then add baked beans, add salsa, stir fried veggies, pickled jalapenos, sour cream, grated cheese and lettuce. Fold the burritos by tucking in the sides. Heat a grill pan and smear some oil on it. Place the burritos on the pan and cook for a few minutes from both sides. Enjoy with some nachos, salsa and sour cream at the side.
