The ingredients needed to cook Swiss Steak:
  1. You need 2 lbs cubed steaks
  2. Use 1 cup flour for dredging, reserve to make gravy
  3. Use 1 tsp garlic powder
  4. Provide 1 tsp kosher salt
  5. You need 1 tsp black pepper
  6. You need 1 tsp dried oregano
  7. You need 3 tbsp oil
  8. Get 1 lg onion, halved and thin sliced
  9. Take 1 green bell pepper, diced
  10. Provide 4 stalks celery, thin sliced
  11. Use 1 jalapeno, seeds removed and diced
  12. Provide 4 cloves garlic, minced
  13. Get 1 (28 oz) can whole tomatoes
  14. Get 1 cup red wine
  15. Get 2 cups beef stock
  16. Use Salt & pepper
Instructions to make Swiss Steak:
  1. Combine flour and spices to make dredge for meat. Dredge meat, shake off excess flour. Set meat aside. Save flour for later.
  2. Heat oil in larger skillet on medium high. Brown. Meat on both sides. Set aside on plate.
  3. To skillet add celery, onions and green pepper stirring to start cooking. Cook until soft about 5-7 minutes.
  4. Add garlic and jalapeño, salt, pepper, garlic and oregano. Stir to combine. Cook for 3-4 minutes.
  5. Add tomatoes, squish to break up.
  6. Sprinkle flour mixture over vegetables and stir to combine. Cook 2-3 minutes to cook out flour taste. Add wine stirring to combine.
  7. Add beef stock, stir to combine. Lower heat and simmer about 30 minutes or until gravy is thick and smooth and meat tender.
  8. Serve over whipped potatoes or noodles. Enjoy.
