The ingredients needed to cook Tomato Rice:
- Provide 1 bowl leftover cooked Rice
- Provide 1 apple and
- Take 2 Desi tomato chopped
- Get 1 medium Onion chopped thinly chopped
- Get 2 tsp chopped Carrot
- Get 2 tsp green peas
- Prepare 2 green chilies chopped
- Take 1 tsp grated ginger
- Take 1 tsp chopped Curry leaves
- Get 1/2 tsp dhuli Urad Dal
- Prepare 2 tsp fried ground nuts
- Provide 1 tsp roasted Cashew nuts
- Provide 1/2 tsp Methi seeds
- Get 1/2 tsp Mustard seeds
- You need 1/2 tsp Jeera
- Use 1 pinch hing powder
- Use 1 pinch turmeric powder
- Provide 1/3 sambhar masala (I used 777 sambar masala)
- Get 1 tbsp cooking oil and deshi Ghee
- Take as needed Coriander leaves to garnish
- Take Salt as required
Instructions to make Tomato Rice:
- Take a wok. Heat the oil mix. Add high, mixed seeds and let it crackle. Now and Urad Dal and chopped Curry leaves and fry in low medium flame till the aroma comes out.
- Add chopped onions and green chilies to the pan and cook for 1 min. Put the veggies, chopped tomatoes,salt and turmeric powder, Sambar powder and cook till veggies are cooked.
- Now mix the cooked Rice, ground nuts, Cashew nuts, grated ginger and 2 tsp of water.
- Mix well the Rice with the masala and cook covered for 1 min in low medium heat. A beautiful aroma comes out. Now Tomato Rice is ready to serve.
