The ingredients needed to cook Mango Kulfi:
  1. You need 4 cups full-fat milk
  2. Provide 2 cup fresh mango pulp(Alfonso preferably)
  3. Get 1/4 tsp saffron strands
  4. Get 1 tbsp warm milk for soaking saffron
  5. Provide 2-3 tbsp almond powder
  6. Get as required Pista slivers for garnish
  7. Provide 5 tbsp sugar or depends upon the sweetness of mangoes
  8. Get 1/4 tsp cardamom powder
Steps to make Mango Kulfi:
  1. Combine the saffron and the warm milk in a small bowl, mix well and keep aside.
  2. Heat the milk in a deep non-stick pan and boil on a medium flame, stirring occasionally.
  3. Let it reduce to half - Keep stirring and mixing the skin formed on the top.
  4. When it’s reduced to half add sugar and almond powder and mix well and cook on a slow flame for another 10-15 minutes, while stirring occasionally and scrapping the sides.
  5. Switch off the flame and allow the mixture to cool completely. - Once cooled, add the mango pulp, saffron-milk mixture and cardamom powder and mix well using a whisk.
  6. Pour the mixture into kulhads and freeze overnight.
  7. Serve chilled with wooden stick
