  1. Prepare 1/2 kg Bitter Gourd / Karelas
  2. Provide 1 Raw Mango / Kairi
  3. Get For the Masala Mix Stuffing -
  4. Provide 1 grated Onion
  5. You need 5-6 Garlic Cloves
  6. Take 1 inch piece of Ginger
  7. You need 1 pinch Hing / Asafoetida Powder
  8. You need 1 teaspoon Haldi / Turmeric Powder
  9. Provide 1 teaspoon Red Chilli Powder
  10. Prepare 1/2 teaspoon Black Pepper Powder
  11. Take 1 teaspoon Zeera / Roasted Cumin Powder
  12. Prepare 1.5 teaspoons Dhaniya / Coriander Seed Powder
  13. Use 2 tablespoons Besan / Gram Flour
  14. Provide 1 pinch Sugar
  15. Provide to taste Salt
  16. Provide Other Ingredients-
  17. Take 1 teaspoon + some oil to brush the karelas
  18. Take 1 kg finely chopped Onions
  19. Prepare 2 teaspoons mixed Turmeric+Red Chilli+Roasted Cumin+Coriander+Dry Mango (Amchoor)+Garam Masala Powders
  20. Use 1.5 teaspoons Oil

Steps to make Kairi / Raw Mango Masala Stuffed Karele:
  1. In a non stick pan or kadhai, roast the besan, set aside.
  2. Grate the onion, ginger and garlic.
  3. Wash, pat dry and gently peel / scrape the rough skin off the karelas. Reserve and set aside the scrapped off skin. Rub a little salt on the karelas and leave to sweat.
  4. Grate the raw mango, leaving the skin on.
  5. In the same kadhai in which the besan was roasted, heat oil, add a pinch of hing, add the dry masala powders, stir briskly.
  6. Add the grated ginger-garlic-onion and saute. Fry till the raw aroma disappears.
  7. Add the scrapped off karela skin, saute well.
  8. Add the grated raw mango and min in. Fry till the masala becomes dryish. Add salt to taste and a pinch of sugar.
  9. Now add the roasted besan and stir briskly. The Masala Mix is ready, take off heat. Set aside to cool.
  10. Take the salted karelas, carefully make a slit running to through the centre. Fill in the cooled Masala Mix.
  11. Lightly brush the karelas with oil all over.
  12. Grill / Bake in a pre heated oven at 150 Deg C for about 20 minutes, turning them over after a 10 minute interval.
  13. Heat oil in another pan. Add the chopped onions, saute till brown.
  14. Add the mixed dry masalas powders.
  15. Add the oven grilled stuffed karelas. Saute for 1 minute.
  16. Cook covered on low-med heat for 10-15 minutes, adding droplets of water over the lid and stirring once or twice in between.
  17. Enjoy with rotis, paranthas or plain dal-rice.
