Instructions to make Pav bhaji:
- Pressure cook the chopped potato, cauliflower, carrot with water and salt for 2 whistles
- Mash the vegetables well into a little chunky texture.
- Heat 2-tablespoons oil and 2-tablespoons butter together in a pan over medium flame.
- Add chopped onion and ginger-garlic paste and sauté until onion turns translucent.
- Add chopped capsicum, chopped tomato and salt and sauté until tomatoes and capsicum turn soft.
- Add turmeric powder,cumin powder,coriander powder and 2-tsp pav bhaji masala powder.Stir and cook for a minute.
- Add little water, mix well and cook for 2-3 minutes.
- Now add the mashed vegetables,mix well and cook for 4-5 minutes.Turn off the flame. Add chopped coriander leaves and mix well. Bhaji is ready for serving
- Cut the pav buns horizontally into halves and toast them on medium flame using a tablespoon of butter and lil Pav Bhaji masala
- Transfer prepared bhaji to a serving bowl and garnish with a cube of butter and serve hot with butter toasted pav, sliced onion and lemon wedges.
