Steps to make Sunshine:
- Rip the mushrooms into small pieces. Add a few sprays of oil to a small frying pan and add the mushrooms and cook for 2-3 minutes turning over so all sides are cooked. Add the spinach and let it wilt.
- Whip the eggs with the skyr. Finely chop the chilli, add to the egg mixture and season with salt and pepper.
- Add a spray of oil to the pan and add the egg mixture. Stir whilst it starts to set then leave to set. When it starts to brown underneath turn over and cook the other side for another minute.
- Meanwhile cut the fish, tomatoes. avocado and chicory into bite size pieces
- Place the omelette on a plate and pile the fish and salad on half. Fold over and serve
