The ingredients needed to prepare Stuffed Zucchini:
  1. Get 2 zucchini
  2. Take 1 onion, chopped
  3. Use 3 cloves garlic, minced
  4. Take 1/2 cup soy crumbles, dried
  5. Prepare (to taste) Mexican spice, salt, pepper, soy sauce
  6. Provide 1/2 tbsp olive oil
Steps to make Stuffed Zucchini:
  1. Cut zucchini lengthwise. Scoop out the flesh but don't go all the way through. Chop remaining zucchini. Set aside.
  2. Salt zucchini halves generously and set aside for about 10 min to extract moisture. Pat dry with a paper towel. Set aside.
  3. Sautée onions until translucent. Add garlic, chopped zucchini and soy crumbles. Add 1/2 water to rehydrate. Season to taste (see above).
