- Get 2 eggs
- You need 1/3 cup roughly chopped arugula

- Sliced onion, peppers, tomato and avocado then set aside on a plate.
- Chopped arugula and put in a bowl next to the chopped veggies.
- Cook grits according to box instructions. Add unsalted butter and Bragg's 24-herb seasoning in the water as it is cooking. Once the grits are cooked, set aside.
- Cracked two eggs and put in a bowl. Add 2-3 tablespoons of water. Whisked the egg and water mixture until smooth. Then set aside to start the heating of the pan to cook the veggies and eggs.
- Use a saute pan, put in 2-3 tablespoon olive oil. Set the stove to medium heat. First, cook the onion and peppers in the pan until the onion is partially translucent but veggies should be still crunchy.
- Then add the egg mixture to the pan. Cook until eggs begin to fluff up around the edges. As you see this, add the chopped arugula to the mixture. Fold in the arugula and eggs until it is fluffy. Do not over stir the eggs/arugula mix.
- Once the eggs are done, put the grits at the bottom of the plate. Start stacking the food with the sliced tomato, egg mixture and then the with sliced avocados. Optional: Sprinkle Bragg's Nutritional Yeast or Himalayan black salt/white pepper.
