  1. Get 15-16 pickling cucumbers, sliced
  2. Provide 1 sweet onion, thinly sliced
  3. Provide 4 Tbsp coarse salt
  4. You need Brine:
  5. Get 4 cups white vinegar
  6. Get 4 cups granulated sugar
  7. You need 10 cloves garlic, sliced
  8. Use 2 Tbsp mustard seed
  9. Provide 3 1/2 tsp. Celery seed
  10. Use 1 1/2 tsp pepper
  11. Provide 2 tsp dried Thyme
  12. You need 1/2 tsp all spice

  1. Combine sliced cucumbers, onions and salt in a large bowl, add enough cold water to cover. Let sit for a couple hours.
  2. After the cucumbers and onions have sat in the salt water for a couple hours…Place all the brine ingredients in a large pot. Bring to a boil.
  3. Meanwhile rinse the salt off of the cucumber mixture.
  4. Add the rinsed cucumber mixture to the brine and return to boil.
